How to make sweet ‘Kheer’

The rice kheer is a delightful, delicious and one of the famous sweet dish in India.

Quick Recipe:

Rice : 56g
Sugar : 42g
Saffron : 0.01g
Ghee or vanaspati : 14g
Almonds : 7g
Raisins : 7g
Cardamom : 1g
Water : 180ml

Weight of cooked Rice Kheer : 210g

Method to make:

Sliced almonds, raisins, and powdered cardamom are fried in hot ghee, then rice added; 120 ml water is added next, and the rice cooked till three fourths done, i.e., slightly underdone. In the meanwhile, the saffron is roasted on a slow fire for a few seconds, powdered and soaked in 15 ml water for about 15 minutes. Forty-five ml water is added to the sugar and allowed to boil and added along with the saffron water to the rice. The rice is allowed to be cooked on a slow fire. When grains are soft and the water absorbed, the rice is taken off the fire.

The sweet & delicious rice kheer is ready for serve.
